Barbecue Cups

Something easy that we had for dinner tonight…this is a “stand-by” recipe that I have been using since my children were little. At our house, just about anything would pass the “kid test” if it was coated in barbecue sauce, but these cups do seem to please even the picky eaters.

Barbecue Cups
1 pound ground beef
1/2 cup barbecue sauce
1 TBL instant minced onion
(or 1/4 cup chopped onion)
1-2 TBL brown sugar
10-oz can refrigerator flaky biscuits
1/2 cup shredded cheddar cheese

Heat oven to 400. In large skillet, brown ground beef; drain. Stir in barbecue sauce, onion and brown sugar; heat until bubbly. Remove from heat and set aside. Separate dough into 10 biscuits; place each biscuit in ungreased muffin cup. (so says the recipe…I use PAM on mine muffin pan). Press dough to cover bottom and sides of cup. Spoon hot meat mixture into cups; sprinkle evenly with cheese. Bake at 400 for 10 to 15 minutes or until crust in golden brown.

These cook quickly – so watch carefully. I have also seen this recipe done as Pizza Cups using tomato paste and some Italian seasoning instead of the barbecue sauce and mozzarella cheese for the cheddar…but, like I said, barbecue sauce is always a winner at our house.
