Caramel Pecan Bars

Last weekend when I was snowed in, to beat the boredom, I baked these:

Caramel Pecan Bars!!

1 cup butter
2 1/4 cups packed brown sugar
2 eggs
2 tsps. vanilla extract
1 1/2 cups all-purpose flour
2 tsps. baking powder
2 cups chopped pecans

1. In a saucepan, heat butter and brown sugar over medium heat until sugar is dissolved. In a mixing bowl, combine the eggs, vanilla and butter mixture. Combine flour and baking powder; gradually add to the butter mixture. Stir in pecans.

2. Spread into a greased 13X9 baking pan. Bake at 350 for 20-25 minutes ot until a toothpick inserted near the center comes out with moist crumbs and edges are crips. Cool in pan on a wire rack. Dust with confectioners’ sugar, if desired (I did not). Cut into bars.

Definitely a good way to “sweeten” another snow day. Since it is only the two of us, I halved this recipe and it worked great. If you love nuts, these are for you. I feel certain I found this recipe some time back on someone’s blog but I honestly have no idea…if it was yours, thanks!! (and let me know.)

    Boy those sound delicious and look like an easy thing to make as well.
    I am trying to figure out how to make it low fat!! lol
    Sorry you got more snow, but it was a great reason to make Chili anyway!!
    Yea, I didn't expect to get our guest room back in shape so quickly either, but the fact, that Scott cleaned it and did the sheets and all made it much easier and quicker! Hubby was very surprised as well.
    I do need to take the comforter to a laudromat to wash it, cause of the doggie. So I have located one with a large capacity washer, now I just have to get there.

  3. These sound delicious! Did they taste like pecan pie? If so, I am going to have to try those out this weekend (while we're snowed in) 😉
