Cookies for Fall: Spicy Oatmeal

My list of “hope to do this weekend” things went fairly well. How about yours? There was one hiccup – that fun fall festival. Oh, we went. And the weather was absolutely perfect for a day outdoors. I was hungry so “fair food” (that I usually do not find appealing) even sounded yummy. The problem…..its next weekend!! I knew there was a problem when we drove right into the city with totally no traffic. Only us…really.

I did get two batches of cookies made – some peanut butter/chocolate chips and a new recipe I found for Spicy Oatmeal Cookies. I thought they were delicious…very fall:) There were mixed reviews from my family (ok, just one naysayer) but I will admit they do have a strong molasses flavor. But I like that and, besides, you really cannot always judge a cookie by its batter!! I’m just sayin’.

Thought I would share the recipe today – and, then, lets do Friday with Friends again this week….and plan to share a favorite fall recipe! Any kind of recipe – not just desserts (although those are often my favorites!) Think stews, chilis, crock pot favorites…..think apple, pumpkin or pear – oh my. I’m hungry and lookin’ forward to them already!

Here is one to get your taste buds started:)

Spicy Oatmeal Cookies

3/4 cup chopped pecans
1/2 cup butter
1 1/2 cups sugar
1/2 cup molassess
2 large eggs
1 tsp vanilla extract
1 3/4 cups flour
1 tsp each salt, baking soda and cinnamon
1/4 tsp nutmeg
2 cups uncooked regular oatmeal
1 cup raisins

1. Preheat oven to 375 degrees.
2. Beat butter with electric mixer until creamy; gradually add sugar and molasses, beating wel. Add eggs and vanilla; beat well.
3. Stir together flour and next four ingredients. Add to butter mixture. Stir in oatmeal, raisins and pecans. (Dough can be stored in refrig in an airtight container for up to one week!)
4. But if you can’t wait (like me), bake for 9 to 10 until lightly browned. Cool on racks for five minutes.

  1. HAHA….that is soo something we'd do too…oh well, now you still have it to look forward to.

    Glad you got your cookies made. Those Spicy Oatmeal ones sound soo yummy. We have been having a little bit of rain. Seems like the kind of weather you'd want to bake cookies in. I would but I am WAY too undisciplined when it comes to cookies. No self control. : (

  2. I've got the fall baking fever and these look like something that needs to be tried around here!! Thanks for sharing the recipe. Glad that you enjoyed the weekend. The only fair food I really like is funnel cakes. I know they are so bad for you, but I could eat and eat them!

  3. Those cookies sound like fall! It is getting down into the 40's at night here So, tomorrow night …..it's chili for supper! Always the first cool weather dish I make every fall. I'll put it on in the morning before I go to work, but….I can already smell it cooking in the crock pot! 🙂

  4. The cookies sound delicious! I am ready to get into some fall baking. As for the garland easy, easy!!!!! We measured a piece of jute string the length she wanted to hang. Cut strips of fabric about 1 1/2 in wide. Decide on length you want. We had four or five different colors. Made stacks, started tying in the center and worked our way out. She made little wreaths for Christmas last year using the same method, on different sizes of wire wreaths from HL. We sat down in the floor together and finished this between feeding the baby. Trust me, you can't mess this one up. Have a blessed week. Jackie
