In Search of a Recipe – Or Two

“Dear Pumpkin.  I’m just not sure things are going to work out.  Maybe it is time for us to take a break…”

Wait. What?  That hurts to even write.  Sure, I’m not a member of the “PSL” club – pumpkin and coffee really do not go together – but I have always loved pumpkin goodies.  Pumpkin bread.  Pumpkin coffee cake.  Um, pumpkin any cake:)  Or, so I thought.  I have tried several pumpkin recipes over the last few weeks (I have an entire Pinterest board dedicated to all the pumpkin yumminess!) but, lately, I have been bitterly disappointed.  So very sad.

Before I continue my “dear John” letter and completely break up with pumpkin, perhaps I just need some better recipes.  Do you have a tried and true pumpkin recipe?  Maybe a new favorite that was just as delicious as the photo promised?  I would love it if you would share.  Send me all the links…and I promise to give them a try.  I have a pantry shelf fully stocked with all the canned pumpkin and it really needs to be baked.  Or stirred into a casserole.  Or just about anything.  Except frothed into coffee and called a latte:(

While we are discussing recipes, I am searching for a yummy vegetarian chili recipe.  We are having a chili lunch after church this Sunday and, while every homemade chili will be unique (and possibly delicious), I know not one will be without some type of meat.  I don’t want to go hungry!  I must not make chili very often as I could not find one recipe waiting for me on any of my Pinterest boards.  Any suggestions would be greatly appreciated!!

  1. Sitting at the Dr. in a very full waiting room. Don’t have access to my recipes right now but I have a pumpkin chili recipe that is yummy. Will send it later. Don’t kick pumpkin packing yet!!

  2. I cannot help with pumpkin, since I’m not much of a fan, but I can help with an idea for chili. Do you ever make taco soup? Or have you heard of taco soup? It’s delicious! Search Google for a recipe and just leave out the meat. Basically it would be corn, black beans, pinto beans and kidney beans with taco seasoning, some ranch dressing seasoning, Rotel tomatoes with the juice and either V8 juice or a mixture of water and vegetable broth. It is so, so good and you can top it with sour cream, shredded cheese and use tortilla chips or Fritos scoops to dip. It’s my favorite go to soup.

    1. Girlfriend, I love taco soup. So much better than chili, in my opion. But, honestly, what is the difference? Love your recipe…thanks for helping this girl out!!

    Also, we make meatless chili fairly often, and if you don’t mind canned beans, I usually do two big cans of Kuner’s chili beans (one original, one hot), a can or two of drained black beans, a large can of petite diced tomatoes, and one packet of chili seasoning mix (just a generic one from King Sooper’s or Walmart), and however much water you want to add. It’s not from scratch, but it’s easy, and everyone always says it’s really good!

    1. Sounds delish…and so easy. Most nights (ok, just about all nights..I am all about easy!) I have to admit, I have not once heard of King Sooper’s!!?:) Thanks for sharing!

  4. I am not a huge, over the top pumpkin fan, but I do make a good pumpkin pie for Thanksgiving and probably Christmas too. My hubby loves it and would eat it year round, but I think that spoils the specialness of it. I use the recipe on the back of the Libby’s can of pumpkin, like my mother always did, and it was always the best. I’ve made other pumpkin things over the years, but my family just wasn’t really “into it”, and I didn’t want to eat it all by myself, so I guess I just gave up on it. I do hope you find what you are looking for. Never had meatless chili before, but I am sure I would love it. Again, I cook what my family likes, and meatless just doesn’t do it for them. (I raised three sons and a husband). But with the high cost of things these days, I think a little more “meatless” meals might be just what we need to survive!
