Good Monday Morning 2.7.22

Happy Monday, friends!  I hope you had a nice weekend.  Ours was definitely chilly (um, cold!) but it was snow-free so that is a win in my book.  We actually had rain all day on Friday which washed away a lot of the ugly snow piles along the side of the road as well as most of the salt that had accumulated.  Another plus!  Could it be possible that we are through with salt, snowplows, and snow boots for this winter??  I have no idea but I will enjoy today’s sunshine….especially as we begin this week leading to “Happy Hearts Day”!:)

Like (just about) everyone else, I will have some Valentine-themed posts this week – including some memories from past days.  That post will be on Wednesday, so please come back.  Until then, here is a “fancy” coffee recipe I tried this weekend.  (Original recipe found here.)  It is supposed to be a Starbucks Copycat recipe.  I don’t often go to Starbucks so I cannot really comment on how well it compares but it was pretty tasty.  It calls for a half cup of milk which made all the other flavors, well, very mild.  If you really want to enjoy the cherry and/or the mocha flavor, you might want to add more of those.  Or less milk.  My opinion…it looked very fancy – and festive – with its whipped creme, sprinkles, and smattering of chocolate chips.  Who even needs the coffee??  You might enjoy it this week with someone special:)  Coffee or no coffee – here’s to a wonderful week ahead!!

INGREDIENTS

  • 1 K-Cup dark roast variety brewed
  • 1 tbsp cocoa powder
  • 2 tbsp maraschino cherry juice
  • 1/2 cup of milk, warmed
  • 1 tsp mini chocolate chips for topping
  • 2 tbsp Reddi Whip for topping
  • red sprinkles for garnish

INSTRUCTIONS

  • Brew 8 ounces of dark roast, strong coffee. Choose a flavor that will stand up against the other ingredients.
  • Add cocoa powder, cherry juice, and warmed milk. Stir well, until blended.
  • Top with whipped cream, mini chocolate chips, and red sprinkles.

  1. I wanted to tell you that I had to correct my recipe for the Oatmeal Cake that you saw on my post the other day. Only the size of the pan. It should have read 9×13 instead of 11 x 13. Not sure where that dimension ever came from in the first place. Not sure there IS such a sized pan! LOL. Anyway, I’m glad the rain washed away some snow and salt. I’m not sure where you live, but the old groundhog said we still had 6 more weeks of winter, so I wouldn’t put away the snow shovel and ice scraper just yet. However, here in Florida…well, that’s another story! LOL. I hope you have a blessed and wonderful week.

  2. Yes! I was happy to have our rainy winter mix wash away much of our snow over the weekend. But no sunshine today.

  3. That coffee drink sounds so good! My hot drink of choice right now is hot chocolate with a little bit of peppermint liqueur. It’s called a Peppermint Patty and is so yummy! It’s like a hot drink and dessert all in one. We’ve had lots of sunshine since Saturday, which has been so nice. I think I may go get my car washed tomorrow!
