My goal for this weekend is to finalize my brunch menu for Christmas morning. I have some tried and true favorites but was almost thinking I would like to be a little creative – or, at least, new – this year. So, I was pulling out the cookbooks in search of a yummy breakfast casserole. Do you have a favorite or other good ideas? It does not have to be an egg casserole (although we love those) but, truly, what real carb lover wouldn’t crave a french toast casserole in the morning? I open for any ideas!
Two things to consider – my manly boy does not like cheese…which is highly unfortunate because the rest of us love cheese and just about 98% of everything I cook has cheese in it. But if I mix it up really well, he will eat it….so casseroles have to be of the low cheese or hidden cheese variety. Also, we have one who is a vegetarian so we usually have meats “on the side” which works fine.

I am sorry but I cannot help you with this! My husband hates casseroles and eggs so I am really out of luck! 🙂 At least he likes cheese though. 🙂
darn, wish i could help you with that one. i love casseroles but i’ve never made any breakfast casseroles before. we’re not “big” breakfast eaters around here. we eat “real” food for breakfast, lol!

Here is a recipe for a very simple breakfast ~ the one my grandbabies simply adore! Perhaps not fancy enough for Christmas morning but one you will want to use for your non cheese eater.
Dutch Babies
1 Stick butter
6 eggs
1 1/2 c. flour
1 1/2 c. milk
Melt butter in 9X13 baking dish in oven while preheating to 425*. Beat eggs, flour and milk (in mixer if possible); then pour into melted butter in 9X13 pan. Bake 20 minutes.
This delicious french toast type of dish comes out of the oven all golden and puffy. Drizzle with pure maple syrup or lemon juice and powdered sugar. Serve with your choice of sides ~ fresh fruit, ham or bacon or sausage and O.J. and there’s your breakfast. :~P

This is a yummy recipe that I found online about three years ago. It’s very easy to tailor this casserole however your family likes it. No meat on part, no cheese on part…you get the picture.
Tator Tot Breakfast Casserole
32 ounces Tator Tots
1 pound sausage
6 XL eggs
8 ounces shredded cheddar cheese
Preheat oven to 425 degrees F.
Spray a 9″x13″ pan with cooking spray. Line the pan with tator tots. I like to make my rows nice and neat–it makes sure there are lots of potatoes in every bite!
Bake for 15 minutes. Remove from oven, then reduce heat to 375 degrees F.
While the tator tots are baking, cook sausage. Drain and set aside.
Whip eggs with a little water. After you remove the tator tots from the oven, pour the eggs over the tator tots. Cover with sausage.
Bake for 15 minutes or until eggs have set.
Remove from oven and cover with cheese.
Return to oven until cheese melts.
Serve with toast or biscuits, some fruit, and drinks…easy, yummy breakfast!
