My list of “hope to do this weekend” things went fairly well. How about yours? There was one hiccup – that fun fall festival. Oh, we went. And the weather was absolutely perfect for a day outdoors. I was hungry so “fair food” (that I usually do not find appealing) even sounded yummy. The problem…..its next weekend!! I knew there was a problem when we drove right into the city with totally no traffic. Only us…really.
I did get two batches of cookies made – some peanut butter/chocolate chips and a new recipe I found for Spicy Oatmeal Cookies. I thought they were delicious…very fall:) There were mixed reviews from my family (ok, just one naysayer) but I will admit they do have a strong molasses flavor. But I like that and, besides, you really cannot always judge a cookie by its batter!! I’m just sayin’.
Thought I would share the recipe today – and, then, lets do Friday with Friends again this week….and plan to share a favorite fall recipe! Any kind of recipe – not just desserts (although those are often my favorites!) Think stews, chilis, crock pot favorites…..think apple, pumpkin or pear – oh my. I’m hungry and lookin’ forward to them already!
Here is one to get your taste buds started:)
Spicy Oatmeal Cookies
3/4 cup chopped pecans
1/2 cup butter
1 1/2 cups sugar
1/2 cup molassess
2 large eggs
1 tsp vanilla extract
1 3/4 cups flour
1 tsp each salt, baking soda and cinnamon
1/4 tsp nutmeg
2 cups uncooked regular oatmeal
1 cup raisins
1. Preheat oven to 375 degrees.
2. Beat butter with electric mixer until creamy; gradually add sugar and molasses, beating wel. Add eggs and vanilla; beat well.
3. Stir together flour and next four ingredients. Add to butter mixture. Stir in oatmeal, raisins and pecans. (Dough can be stored in refrig in an airtight container for up to one week!)
4. But if you can’t wait (like me), bake for 9 to 10 until lightly browned. Cool on racks for five minutes.
