Happy Monday!! It was a nice weekend around here. I had an evening out with a girlfriend on Friday night (we went to a local theater’s production of Sound of Music…yes, the hills have been alive here all weekend!) and then I enjoyed my monthly breakfast with a bestie on Saturday morning. We literally have all of the current world problems solved in two hours – so if you need an opinion, just ask! Ha. Just kidding (we solve ’em but don’t ask!) Last night we had our monthly birthday fellowship after church and I made this dessert to share. It was a hit! I didn’t bring home a crumb. I’m usually putting something together on Sunday afternoon but this one needed to be in the fridge for several hours, so I made it on Saturday evening. Brilliant!
This morning we are headed out to breakfast. My husband has a men’s fellowship and, well, the ladies (sometimes) tag along and have our own, separate fellowship:) Later tonight, dinner with friends. Mexican! Wednesday…lunch with several girlfriends. Do you see a pattern here? Do you see a problem here?? Not really – but, goodness, so much eating!! Generally, the safest option (and often the only option) for me is a salad. I see a lot of salad in my week….and I will be okay with that. I enjoy salads but I like them much better “out” than when I fix them at home. Not sure why but my “homemade” salads are boring. Not to mention, the lettuce always seems to go bad before I use it all. Grr. No need to buy lettuce this week!!

Sounds like a really good weekend. Lots of time with friends and good eating. That dessert looks sooo good! I just may have to make it. My daughter and I made cookie dough last week and ate it all- unbaked. Isn’t that kinda wrong? Well, it tasted good!! Looking forward to your vacation post part II. Have a great day!
I absolutely hear you about solving all the world’s problems, Jennifer! I love those conversations with those who sift through what we say, get rid of what is useless, and keep any grains of truth that are left. These are true friends, indeed!
Sounds like a really good weekend. Oh my! I checked that dessert and it looks delicious! We have the same problem with salads. They just don’t taste as good as at hone. Hope you enjoy all you outings coming up!
I feel the same way about my homemade salads! Salads in restaurants are crunchy and fresh and delicious, I may try and copy exactly what they do but never quite manage it!
